Fo rtified Wines
Fortified wine is any wine to which extra alcohol, usually spirits, and usually brandy, has been added. Back in the day, wine would be fortified to preserve the flavor and to prevent it from going off and developing a ‘vinegar’ taste. Fortification stops fermentation by killing the yeast, leaving a sweeter wine with a higher alcohol content than normal.
The most common fortified wines are Sherry, Port, Madeira Wine and Marsala. There is a significant difference between spirits made from wine and fortified wines. Spirits made from wine are distilled, and reach much higher alcohol content, typically 37.5% to 40% ABV, and sometimes more for premium spirits. Fortified wines are commonly 18% - 20% ABV, and may be called dessert wines in some countries, or liqueur wines in Europe.
If the extra alcohol is added after fermentation, once the natural grape sugar has been turned into alcohol, the wine will be rather dry, as seen in many Sherries. However, adding alcohol during fermentation stops the action of the yeast and leaves natural, unfermented sugars in the wine, as in the case of Port.
